Zanotto Col Fondo

Zanotto Col Fondo is a pioneering winery in the Veneto region of northern Italy, dedicated to reviving the area’s ancestral sparkling traditions. Founded by Riccardo Zanotto, the estate focuses on the “Col Fondo” method, where wines undergo their second fermentation in bottle and remain unfiltered, leaving a natural sediment that deepens flavor and texture. Vineyards are planted on hillside sites at high elevation, where Glera and other native varieties thrive in mineral-rich soils and cooling breezes. Farming is carried out with minimal intervention, and fermentations rely solely on native yeasts to preserve authenticity. In the cellar, no disgorgement or heavy manipulation takes place, ensuring that each wine carries the vitality of its origins. Zanotto Col Fondo’s wines are vibrant, unpolished expressions of Veneto’s sparkling heritage. The white Col Fondo, made primarily from Glera, shows crisp orchard fruit, citrus zest, and wildflower aromas, layered with notes of bread crust and subtle salinity from the lees. On the palate it is dry and refreshing, with lively acidity and a textured, mineral finish that speaks to its hillside origins.

The red Col Fondo offers a rare and playful take on sparkling reds, bursting with cherry, strawberry, and violet, lifted by gentle bubbles that soften the tannins and bring energy to the wine. Alongside these, more traditional sparkling cuvées show clarity and finesse, with bright fruit, delicate florals, and finely integrated effervescence.
