Château de Gaure
Château de Gaure is a creative organic and biodynamic estate nestled in the Languedoc-Roussillon region of southern France, where history, art, and terroir converge. Owned and run by Pierre Fabre, the domaine sits amid vineyards that stretch across the hilltops and plateaus near Limoux and the northern reaches of the Roussillon, where soils of schist, limestone, and clay mingle under cooling winds and generous Mediterranean sun.
Since 2005 the estate has committed to biodynamic farming: low yields, hand-harvested grapes, native yeasts, and a delicate touch in the cellar. The vineyard sites are varied—some planted at higher altitudes to bring freshness and minerality, others where southern exposures yield more warmth and density. Their work balances respect for tradition with an artistic sensibility, from vine to label.
Château de Gaure produces a carefully curated line of wines: powerful, expressive reds from Grenache, Syrah, Carignan and Mourvèdre; lively, textured whites featuring Chardonnay, Chenin, Mauzac, and local varietals; and sparkling wines and blends that highlight the distinctive terroirs of Limoux and the craggy hills of Latour-de-France. Each bottle reflects a sense of place—rich, nuanced, alive—with wines that feel both rooted in southern France and infused with personality and precision.

Château de Gaure’s wines are bold, expressive interpretations of Limoux and the broader Languedoc terroir—rich fruit, earthy depth, and a mineral backbone held together by freshness. Here’s a taste breakdown:
Whites
The organic Limoux whites—often made from blends of Chardonnay, Chenin Blanc, and sometimes Mauzac—are luminous and layered. On the nose, expect aromas of pear and orchard fruit, white flowers, and brioche or toasted almond from lees aging. In the mouth they combine round texture with lively acid, finishing on mineral and citrus notes that keep them crisp yet generous.
Reds
The reds are deep and structured, often built from Grenache, Syrah, Mourvèdre, and Carignan. You’ll find dark berry fruit—black cherry, blackberry—alongside savory accents like licorice, black pepper, and garrigue herbs. Tannins are well-integrated—not dominated by oak but enough to give grip and longevity. The finish tends to be spicy, sometimes with tobacco or earth tones, balancing richness with energy and a lingering, fresh minerality.
Overall
What stands out is how Château de Gaure balances power with finesse: wines that are bold without being heavy, expressive without losing delicacy. They reveal the schist and limestone soils in the structure and the freshness, and they respect both ripeness and regional character. Each bottle carries both intensity and elegance, ideal for drinking now with pleasure or cellaring for deeper evolution.
