Weingut Liszt — Leithaprodersdorf, Leithaberg, Burgenland, and a family operation Theresa and Bernhard have taken somewhere properly wild. Took the place over from Bernhard's family, and rather than just keep things ticking along, they've gone all in — biodynamic, regenerative, organic, plus a working farm, bakery and Heurigen-restaurant all under the one roof. This isn't just a winery, it's a whole functioning ecosystem.

Clay-rich, mineral soils, everything worked by hand, nothing synthetic anywhere near the place. Blaufränkisch and Zweigelt lead the charge, but the real fun is in the cuvée names — every single wine plays on the family surname. Nudiszt, a bare, honest Welschriesling, half skin contact half not, spontaneously fermented, eight months in large wood. Soliszt, a concentrated old-vine Blaufränkisch, whole bunch, 11 months in used barrel, no racking, no additions. Traditionaliszt blends Grüner Veltliner, Welschriesling and Furmint in amphora and small barrel. Individualiszt pushes further still — Muskat Ottonel, Grüner Veltliner and Furmint, each vinified separately, open vats, basket press, pure instinct.

Gravity over pumps, natural yeast over inoculation, zero additives over stability for stability's sake, no filtration over cosmetic polish. Quiet precision rather than grand gestures, and every glass genuinely tells you something about Burgenland's soil and climate.
