Working primarily with traditional Mediterranean varieties such as Grenache Noir, Grenache Gris, and Macabeu, Amistat focuses on small-batch cuvées that highlight the freshness and complexity of the region’s schist and clay-limestone soils. Fermentations are spontaneous, extractions are gentle, and the wines are bottled without fining, filtration, or added sulfur whenever possible.
